small batch tea ferments

All of our flavors are micro- fermented on site to maintain freshness.

Happy Gut ferments are tea focused. Many flavors are single origin teas harvested from estates in Japan, Vietnam, South America, and beyond. Other flavors are blends of dried ingredients full of herbal benefits such calendula, hibiscus, and echinacea. At Happy Gut Sanctuary, we only do single fermentation. The tea and its complexity take center stage--black, green, herbal, blends--they are all different, which require different fermentation time and attention.

We participated in the first ever Kombucha Kup held by KBI in 2022. All three of our submissions placed:
Amaterasu received gold in the Original category, Dragon's Nectar received gold in the Jun category, and Echinacea received silver in the Herbs/Floral category.

Up to 12 Happy Gut flavors are available for single servings and 32oz howler fills, with over 20 flavors in rotation. Patrons are welcome to bring their own growlers (32 or 64oz).

Happy Gut ferments like no one else in Rochester! Not only do we produce tea-forward kombucha, we are the only producers of jun--tea fermented with local raw honey, and the only producer of true coffee ferments (available on nitro).

We feature an array of black, green, and herbal teas sourced from local expert, Happy Earth Tea, located in the South Wedge. All teas are made to order and steeped to perfection!
Pour over, espresso, and speciality drinks--we've got something for coffee lovers! Beans are roasted locally by Aporia Coffee Co. (A delicious decaf option is always available)

Baked goods | savory fares

An assortment of locally made pastries and baked goods are always available, along with dairy-free and gluten free options.
